Strawberry Scones

Are you a scone person yes or no? About five years ago I became a scone person. See I always thought scones were dry and didn’t really have flavor. Now that I make them, I love scones. Strawberry is one of my favorite flavors for scones.  My scones are not your traditional scones for two reasons. First reason is they are moist. Second reason is I scoop them, instead of rolling them and cutting them. By scooping them it helps keep them moist and scooping them is so much easier. If you know me at all, you know I like easy recipes.

Ingredients

  • 3 cups flour
  • ½ cup sugar
  • 1 tbsp baking powder
  • ½ TSP Salt
  • 1 stick unsalted butter, cold diced
  • 1 large egg cold
  • ¼ cup cold sour cream
  • ½ cup cold buttermilk 
  • 1 cup diced strawberries

 

Directions

  1. Preheat the oven to 400 and line 2 trays with parchment paper, set trays aside.
  2. In a large bowl whisk together flour, sugar, baking powder and salt.
  3. Cut in cold butter with a pastry blender.
  4. In a separate bowl whisk together milk, sour cream, egg and vanilla extract. Add wet ingredients to the dry ingredients.
  5. Fold in diced strawberries.
  6. Using a large cookie scoop, scoop dough about 3” apart on the prepared baking sheets. Bake for 15-18 minutes, mine took 16 minutes.
Ready in 22 minutes Makes 10-12 Scones

 

Tips & Recommendations

Make sure the strawberries are bite size. If your strawberries are super moist, add a few more tablespoons of flour. You can make a glaze to drizzle on them if you wish.
