Strawberry Shortbread Cookies

I love strawberries, like I get so excited when strawberry season is upon us. So as I was playing with recipes, I came up up with the idea of strawberry cookies. I had freeze dried strawberries and decided to use them since strawberry season isn’t quite here yet. I made these cookies and I could have eaten everyone, but instead I gave them to some taste testers. Who by the way loved them. I think these would make a great cookie gift to someone. You can drizzle them or add sprinkles to them before you bake them. Also use your favorite cookie cutter. What should be my shortbread cookie flavor?

Ingredients

  • 1 cup unsalted butter room temperature
  • ¾ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups all purpose flour
  • 3 tbsp freeze dried strawberries powder 
  • ½ tsp salt
  • Glaze recipe-1 cup powdered sugar with 1-2 tbsp of milk and splash of vanilla

 

Directions

  1. In a large mixing bowl cream butter and powdered sugar until light and fluffy about 3 minutes.
  2. Add 1 tsp vanilla extract and mix until combined, make sure to scrape down the sides of the bowl.
  3. Slowly add the flour, freeze strawberry powder and salt, mix until combined. It will be crumbly.
  4. Form the dough into a disc, wrap in plastic/parchment paper and place in the refrigerator for an hour.
  5. Roll out the dough on a lightly floured surface to a ¼-½” thickness. Use your favorite cookie cutter to cut out. 
  6. Bake for 10 minutes or until done.
  7. Let cookies cool.
  8. If you want a glaze on them, whisk glaze ingredients in a bowl and drizzle on each cookie.
  9. Cookies will stay fresh in an airtight container for 1 week or in the freezer for 2 months.

Tips & Recommendations

I get my freeze dried strawberries from Trader Joes, but Target also carries them. Make sure your butter is room temperature. I used the whole bag of freeze dried strawberries, just pulsed them in my blender to make the powder.
