Tortellini Sausage Soup

I am not a huge fan of soup unless it is cold outside and I mean super cold. However I have to change my theory because the kids love soup. I made this tortellini sausage soup and the kids absolutely loved it. (no Jimmy didn’t try it, he doesn’t eat soup) I even gave my friend Rachel some soup and she loved it too. The first time I had a version of this soup was at my sister’s and it was delicious. I love that this soup is easy to make and a great crcokpot recipe. It is perfect for a Fall day.

 

You can use really any type of sausage. I have used a chicken sausage and ground Italian sausage, the kids loved both. If you use a sausage with casing, remove it first. I cook the sausage first and then add it to the crockpot. I also cook the tortellini separately. I add some to each bowl and then pour the soup over the top of the tortellini. I do this because if you have leftovers, the tortellini can become mushy and soak up a lot of the broth. So I store leftovers separate.

 

If you don’t have a crockpot, I suggest you run to the store now and get one. My crockpot is used a few times a week. It makes though busy days easier. Plus we love coming home and smelling dinner.

Ingredients

  • 1 ½ lbs Italian sausage
  • 1 medium onion diced
  • 1 28oz can of diced tomatoes
  • 32oz chicken broth low sodium
  • 12 oz cream cheese
  • ½ tsp dried basil and ½ tsp dried oregano or 1 tsp Italian seasoning
  • 2 tsp minced garlic
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 cups of packed spinach
  • Tortellini 

 

Directions

  1. Heat olive oil in a skillet on medium heat. If your sausage has casingins, take the sausage out of the casing and crumble them into the skillet. If your sausage doesn’t have casing dice the sausage. Cook sausage until done. Add sausage to crockpot.
  2. Using the skillet, cook the diced onion. Add the cooked onion to the crockpot.
  3. Add the diced tomatoes, chicken broth and seasoning to the crockpot. Stir to make sure it all is mixed well.
  4. Cut the cream cheese into cubes and add to the crockpot, give it a good stir. 
  5. Cook on low heat for 6-8 hours or high for 3-4 hours.
  6. About 30-45 minutes before you are ready to serve, add the packed spinach. Add additional salt and pepper to taste.
  7. Cook your tortellini per packaged directions. Drain tortellini. Scoop tortellini into bowls. Using a ladle scoop soup over cooked tortellini. I do this so the tortellini doesn’t get mushy. If you want to add it the soup in the crockpot, add it about 20 minutes before serving, but don’t cook it first. 
Ready in 6-8 hours Serves 8-10 people

 

Tips & Recommendations

Use your favorite sausage, to me most of them all work. I prefer to cook the tortellini and add it to each soup bowl. We also served it with a fresh loaf of bread. You can omit the spinach if you want, but the kids did eat it and liked it.
