Zucchini Brownies

These zucchini brownies are a good way to eat more veggies ????.There are 2 cups of grated zucchini in them. They are super moist and full of flavor. You can’t taste the zucchini, so your picky eater will eat these. Really all you can taste is chocolate, it’s like eating a super moist brownie. You will definitely love these. If you want you can reduce the sugar a little bit.

Ingredients
- ⅓ cup canola oil
- ¾ cup sugar
- ¼ cup dark brown sugar
- 2 tsp vanilla extract
- 1 ½ cup all purpose flour
- ⅓ cup black or dark cocoa
- 1 tsp baking soda
- ½ tsp salt
- 2 cups grated zucchini (about 2 small)
- ¾-1 cup Ghirardelli chocolate chips
Directions
- Preheat the oven to 350 and line a 9×9 pan with parchment paper, set aside.
- Grate zucchini, set aside, do not drain.
- In a large bowl whisk together oil, sugar, brown sugar and vanilla extract.
- Add flour, cocoa powder, baking soda and salt, mix together. Mixture will be dry, that is okay.
- Fold in zucchini and let sit for five minutes. Mixture will become moist.
- Fold in chocolate chips.
- Spread batter into the prepared pan and bake for 25-30 minutes. Brownies are done when toothpick comes out with a few crumbs on it, no batter.
Tips & Recommendations
Make sure when you check with a toothpick there are a few crumbs, make sure there isn’t batter. This is a very moist brownie. You can add nuts if you want. Do not drain the liquid from the grated zucchini.
