Banana Bread

Banana Bread has always been one of my favorite things to make. I am so happy to share that same love with my kids. JJ is always asking to make some banana bread with me and I love spending that time with him. He is my little bud!! Growing up I loved spending time with my mom in the kitchen. I really wish my mom was here to spend time with my kids and me in my kitchen cooking and baking.

Banana bread is an easy recipe to make especially with kids. I like to pre measure the ingredients when I bake. By measuring your ingredients ahead of time it actually saves time when baking. Plus you can make sure you have all the ingredients you need. I used to not measure my ingredients before baking and I can’t tell you how many times I was missing an ingredient.

Ingredients

  • ½ cup unsalted butter room temperature
  • ½ cup sugar
  • ½ cup brown sugar
  • 2 large or 3 small ripe bananas
  • 2 large eggs room temperature
  • 2 TSP pure vanilla extract
  • 1 ¾ cup all purpose flour
  • 1 TSP baking soda
  • 1 TSP salt
  • ½ TSP cinnamon
  • ½ cup Greek yogurt or Daisy sour cream
  • ½ cup chopped walnuts or pecans optional
  • ½ cup chocolate chips optional
  • ½ cup Cookie Butter

 

Directions

  1. Preheat oven 350. Grease 5″x12 bread pan with Crisco or spray with cooking spray
  2. In mixing bowl cream butter for 2 minutes on medium speed or until light and fluffy.
  3. Add sugar and brown sugar and mix for another 2 minutes, making sure to scrape down sides of the bowl occasionally.
  4. Add bananas and mix on medium for 2 minutes.
  5. Add eggs one at a time, making sure each one is incorporated.
  6. Add vanilla and mix for 30 seconds.
  7. In a separate bowl, mix flour, baking soda, salt and cinnamon. Slowly add dry ingredients to the wet mixture just until combined.
  8. Add in Greek yogurt/sour cream and mix for 1 minute. Fold in chocolate chips and pecans or walnuts.
  9. Pour 1/2 the mixture into a well greased pan, add dollops of the cookie butter, add the the rest of the batter.
  10. Bake for 60-65 minutes. Check for doneness at 55 minutes. Each oven and pan are different, so it might not take as long or take longer than 60 minutes. Bread is done when the toothpick comes out clean. Cool completely on the rack before removing bread from the pan.

Tips & Recommendations

Make sure your bananas are ripe, the riper the better. Cookie butter is also Biscoff butter.
