Bourbon Pecan Brownies

I didn’t realize how much I like bourbon until my last birthday. We can say my love for bourbon started then. When I used to do custom orders, my bourbon cupcakes, cake and donuts were really popular. I didn’t have a brownie recipe until now. I Love these bourbon brownies. When I was taking pictures (which by the way it took two different days) I might have eaten a brownie or two or three of them.

I love that these brownies are pretty easy to make. There are some steps to it, but don’t let that scare you. Follow the directions and you will be good to go. I have some pointers for you. You don’t want to burn the chocolate when melting it. I cut the butter in thicker slices and melt it with the butter and constantly stir while melting. This helps with not burning the chocolate. It also helps to have room temperature butter. I use Ghirardelli chocolate chips, I love the way they melt and taste. Make sure whisk your dry ingredients, this will help with getting the clumps out of the cocoa powder.

Ingredients

  • 1 cup all purpose flour
  • ½ cup black cocoa or dark cocoa
  • 1 tsp salt
  • ½ tsp espresso powder optional
  • ¾  cup unsalted butter
  • ¼ cup 60% cacao chocolate chips
  • ¾ cup brown sugar
  • ¾ cup sugar
  • ¼ cup bourbon
  • 1 tsp vanilla extract
  • 3 large eggs room temperature
  • ½ cup chocolate chips
  • ½ cup chopped pecans

 

Directions

  1. Preheat the oven to 350 and line a 9×9 pan with parchment paper, spray with Pam, set aside.
  2. In a large mixing bowl, whisk together flour, cocoa, baking powder, salt and espresso powder, set aside.
  3. In a medium pot melt butter and chocolate chips, until melted.
  4. Add brown sugar and sugar to the pot, continue to whisk until the sugars are melted.
  5. Pour the chocolate butter mixture into a large bowl. Whisk in the bourbon and vanilla extract. Add the eggs and whisk to combine.
  6. Add flour mixture and mix until just about combined.
  7. Add chocolate chips and pecans. Mix until combined.
  8. Spread batter evenly prepared baking pan. Sprinkle the top with pecans and salt if desired.
  9. Bake for 30 minutes or until done.
Ready in 45 minutes Makes a 9x9 pan

 

Tips & Recommendations

Be careful not to over mix. This recipe is a gooey and rich brownie batter. You don’t have to add the pecans, just add more chocolate chips. I highly suggest black cocoa it really is the best thing out there. If you don’t have it you can use dark cocoa powder.
