Broccoli Bacon Cheddar Quiche

I remember growing up and my mom making quiche. She always served it for her lunch with friends. My mom’s quiche was so good and rich. To me quiche is the one of the best things to serve for brunch, that isn’t sweet. It is that savory dish to go along with the sweet dishes. Plus it is easy recipe to make and can be made ahead of time. It is great recipe to make and freeze too.

Now a days I prefer a lighter quiche. My kids didn’t know what quiche was, but they definitely were a fan of it. They love scrambled eggs, so I knew they would love quiche. Quiche is kind of like a throw what you have in it meal.

First cook your add in’s, like the bacon and broccoli. Sometimes I cook them the day before, it really depends what I have going on. I like the bacon to be crispy, to me it holds up better when baking. Second I don’t like to cook the broccoli all the way. The broccoli will cook more, while the quiche is cooking.

Here is how I assemble the quiche. Add the broccoli to the bottom of the prepared pie dish. I feel like this holds up the crustless quiche. It gives it a good base.

Next I add the crumble bacon. You want to make sure there is bacon everywhere. To me there needs to be bacon in every bite. It is just one of those things that I like.

Next sprinkle the cheese. This is the fat to help hold the quiche together. I go with cheddar because it pairs so well. But you could go with Swiss and gruyere cheese, both or either would be so good.

Now you want to mix the eggs, milk, half and half, salt, pepper and mustard all together. You need to whisk it very well to make sure it is all incorporated. Once it is mixed, pour over the add on’s in the pie dish.

Bake for 37-45 minutes. Let it cool for a few minutes before serving.

My kids absolutely love this meal. They devoured most of the quiche at dinner. The girls finished up the last two tiny pieces for breakfast. They asked me if this meal could be on repeat for dinner and brunch. They also want me to try some different add ons in the quiche.

Ingredients

  • 1 lb of bacon 
  • ⅔ cup broccoli
  • ½ cup cheddar cheese
  • 8 large eggs
  • ¾ cup milk
  • ¼ cup half and half
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp dijon mustard

 

Directions

  1. Preheat the oven to 350. Grease a pie dish with butter very well, set aside.
  2. Cook bacon and set aside.
  3. Cut broccoli into small pieces and sauté them or bake them.
  4. Add the broccoli to the prepared pie dish. Crumble the bacon and sprinkle on top of the broccoli. 
  5. Sprinkle cheese on next.
  6. In a large bowl whisk together eggs, milk, half and half, salt, pepper and dijon mustard.
  7. Pour egg mixture into the prepared  pie dish.
  8. Place the pie dish on a baking sheet and bake for 40-45 minutes. 
  9. Edges will be slightly brown and the center should come out clean.
  10. Leftovers can be stored for 3 days in the refrigerator or in the freezer for 3 months.
Ready in 60 minutes Serves 6-8 people
