Brownie Ice Cream Cake

I remember when I was younger I used to love Carvel ice cream cakes. Some years for my birthday my mom would get me one. I always loved the crunch in the cakes. So with Jimmy’s birthday this week, I decided to make an ice cream cake with the a crunch layer in it. I also went with a brownie ice cream cake, since Jimmy loves brownies and ice cream. This cake starts with a layer of brownie, then layer of ice cream, layer of cookie crunch, Topped with Cool Whip, sprinkles and hot fudge. So I surprised him one night when he got from work with this cake. He was so excited about it and loved it.

I love easy recipes, especially in the summer. I made a homemade brownie, but I am sure you can use a box mix if you want. However I will say this homemade recipe is just as easy as a box mix. I love Tillamook ice cream it is so creamy and tasty. Like it is better than most ice cream places. So if you haven’t tried it, I suggest you do. You will thank me I bet.

Ingredients

  • ¾ cup all purpose flour
  • ¾ black cocoa
  • 1 cup sugar
  • ½ cup brown sugar
  • ½ tsp salt
  • ¾ cup oil
  • 3 eggs room temperature
  • 1 tbsp Kahlua
  • 2 tsp vanilla extract
  • ½ gallon Tillamook vanilla ice cream
  • 10 vanilla Joe Joe’s (Oreos) and 2 tbsp melted butter
  • 8oz Cool Whip
  • Sprinkles
  • Chocolate fudge syrup

 

Directions

  1. Preheat the oven to 350.
  2. Spray a 9” springform pan with cooking spray, set aside. 
  3. In a large mixing bowl whisk together flour, cocoa powder, sugar, brown sugar and salt.
  4. In a medium bowl whisk together the oil, eggs, Kahlua and vanilla extract.
  5. Mix the wet ingredients with the dry ingredients, until just combined.
  6. Pour the batter into the prepared pan and bake for 20-25 minutes. Mine took 22 minutes to bake
  7. Let the brownie cool completely in the pan. Let the ice cream soften and spread over brownies. Freeze for 1 hour.
  8. While the brownie cake is freezing, make the cookie  crunch filling. Crush up 10 vanilla Joe Joe’s or Oreos and mix with melted butter.
  9. Add the crunch topping and freeze for an hour.
  10. Add the Cool Whip and spread evenly. Top with your favorite sprinkles. Freeze for at least 3 hours.
  11. Top with your favorite hot fudge topping.
Ready in 6 hours includes freezing time Serves 10-12 people

 

Tips & Recommendations

Depending on the brand of ice cream you go with it will depend on how long it will need to sit out. The Tillamook brand is a creamier and softer ice cream so it only takes about 10/15 minutes to get soft. You can use a box mix brownie if you wish
