Chocolate Chip Ice Cream Sandwiches

Chipwiches were one of the favorite we had for a summer snack growing up. I remember my mom making these all the time. They are so easy to make and so yummy. It is a cookie sandwich with ice cream in between. You can use any flavor ice cream from Tillamook. We used Caramel and Mudslide. Well if you asked Jimmy he would say they are the best thing ever. He wanted to eat more than one, the day I made them. I said he wasn’t allowed. HAHA.

The key is to make sure the cookies are frozen. Because if you use a soft cookie when you scoop the ice cream on them, the cookie might break. After they are made, you want them to freeze and set for a couple hours.

  1. Bake cookies, let cool and place cookies in the freezer.
  2. Match up cookies in pairs, similar in size.
  3. Using an ice cream scoop, scoop ice cream onto one cookie and place another cookie on top.
  4. Roll each cookie sandwich in sprinkles.
  5. Place cookie sandwiches on a tray and freeze for 3 hours.
Ready in 6 hours, includes making homemade cookies and freezing time Makes about 12 cookie sandwiches

 

Tips & Recommendations

I use Tillamook ice cream which is a little softer. If your ice cream is super hard, let it sit for a few minutes before scooping.
