Homemade Granola

One of my favorite things to eat fo lunch is an Acai bowl or yogurt with granola. Granola is so easy to make, that I decided it would be a good recipe to share this week with you.  Buying granola at the store can get expensive, so why not make it at home is my thought. I think homemade granola is not as sweet as store bought. I used honey, but you can definitely use maple syrup.

Start by mixing your dry ingredients in a bowl. I used gluten free oats but you don’t have to. Just make sure they are not quick oats. You can mix the almond butter with the wet ingredients or add it half way through the cook time. I prefer to add it halfway through the cook time, while I am mixing the granola on the tray.

Ingredients

  • 3 cups dry oats (not quick oats)
  • ¾ cup chopped pecans
  • 1 ½ tsp cinnamon
  • ¼ cup olive oil or melted coconut oil
  • ½ cup honey
  • 1 tbsp vanilla extract
  • ½ cup craisins
  • ¼-½ tsp salt
  • ½ cup almond butter optional

 

Directions

  1. Preheat the oven to 325. Line a sheet pan with parchment paper and set aside.
  2. In a large bowl mix together oatmeal, pecans and cinnamon.
  3. In another bowl whisk together olive oil, honey and vanilla extract.
  4. Add honey mixture to the oatmeal mixture.
  5. Add granola to the prepared pan.
  6. Sprinkle crainins and salt on top and mix gently.
  7. Bake for 30 minutes, stirring at the 15 minute mark. When you take it out to stir at the 15 minutes mark, feel free to add almond butter and mix it together. 
Ready in 30 minutes Serves about 10 people

 

Tips & Recommendations

You can mix the almond butter at the beginning, but I felt it was a little burnt. I like it better during the halfway mark.
