Oreo Blondies

I made these Oreo blondies awhile ago and they were such a hit. So I updated them a little bit  and I think they are perfect for your summer BBQ. These are easy to make and don’t require a mixer. Just a bowl and a whisk!! Easy peasy!! If you know me at all you know I am obsessed with the Trader Joe’s Vanilla Jo’Jos. The cream in the cookie is vanilla bean and so easy. This is one of my favorite recipes to make for a gathering. Everyone just loves them!!

Ingredients

  • 1 cup unsalted brown butter
  • 1 ½ cups light brown sugar 
  • 1 large egg and 1 egg yolk room temperature 
  • 2 tsp vanilla extract
  • 2 ¼  cups all purpose flour
  • 1 ½  tsp baking powder
  • 1 tsp salt
  • 1 cup white chocolate chips
  • 10-12 vanilla Oreos (I prefer the Trader Joe’s version Jo’Jo’s)
  • ¼ cup sprinkles 

 

Directions

  1. Preheat oven to 350.
  2. Line 9×13 pan with parchment paper.
  3. Brown butter in the pan on medium heat, let cook slightly. 
  4. In a medium bowl whisk flour, baking powder and salt, set aside. 
  5. In a large bowl whisk brown butter and brown sugar. 
  6. Add eggs and vanilla to butter and brown sugar mixture. 
  7. Slowly add dry ingredients to the wet mixture. 
  8. Mix until combined. 
  9. Fold in most of the broken Oreos, white chocolate chips and sprinkles. 
  10. Put the mixture in a prepared 9×13 pan.
  11. Put the rest of the Oreos and add more sprinkles to the top. 
  12. Bake for 25-30 minutes. Mine took 25 minutes.
Ready in 40 minutes Makes 18 bars

 

Tips & Recommendations

I prefer the vanilla Jo Jo’s from Trader Joes. Trust me once you try them you will be hooked. Use your favorite sprinkles, I used red, white and blue for Summer Holidays. You can also use chocolate chips instead of white, I just did this a non chocolate blondie.
