Easy Hash Brown Egg Casserole

We love breakfast in our house and I am always trying new recipes. My kids love eggs and hash browns, so I knew this easy hash brown egg casserole would be a winner. They loved it the day I made it and loved it for leftovers.

I start with adding a layer of hash browns on the bottom of the dish, you can also use tater tots if you want. I mixed the eggs, milk, salt and pepper together. Next I added the bacon and cheese to and mix it all together. Pour the egg mixture over the hash browns and let it bake away.

This is a perfect casserole to make for a brunch with family and friends. It feeds a lot and any leftovers can be saved for the next day or you can freeze them.

I mean hash browns, eggs, bacon and cheese, how can you go wrong? You can add peppers and onions if you want.

Ingredients

  • 1-2 lbs of cooked bacon
  • 3 cups of hash browns (I used patties) 
  • 10 large Egglands Best eggs
  • ½ cup milk
  • 1 ½ cups of shredded cheddars divided
  • 1 cup of swiss or gruyere 
  • Salt and pepper to taste
  • ½ cup diced peppers optional

 

Directions

  1. Cook bacon per your preference, I cooked my bacon in an air fryer.
  2. Line a bottom a 9”x13” casserole dish with hash browns or tater tots
  3. In a large bowl whisk together eggs, milk, half the cookies bacon, 1 cup shredded cheese, swiss/gruyere, salt and pepper. 
  4. Pour the egg mixture over the hash browns. Sprinkle remaining cheese on top.
  5. Bake for 45 minutes or until done.
Ready in 60-75 minutes Makes a 9"x13" casserole

 

Tips & Recommendations

You can add an additional 2 eggs if you want. You can also use precooked bacon. You can pick what types of cheese you want.
